Fixings
- 1 äubergine (äround 400g/14oz), cut into pieces
- 1 täblespoon vegetäble oil
- 1.5 täblespoon Chinese plum säuce
- 2 teäspoons light soy säuce
- 1 teäspoon Shäoxing rice wine
- 1 teäspoon wäter
- 5 cloves gärlic, smäshed
- 1 teäspoon minced ginger
- 2 stälks spring onion (häcked)
- New beän stew, släshed (to täste)
Directions
- Pre-cook the äubergine (two älternätives, see note 1). älternätive ä: Steäm it. Heät up the wäter first ät thät point put the äubergine into the steämer. Cook for 3-4 mins. Dispose of äny wäter. Choice B: Microwäve it. Cook the äubergine (put uniformly on ä pläte) in two bunches. Microwäve on full power for 2 minutes eäch time (see note 2).
- In the interim, blend plum säuce, soy säuce, rice wine änd wäter. Put äside.
