Easy and Fast Creamy Mushroom Risotto (VEGAN + GF)

Fixings 

  • 1 tbsp olive oil 
  • 1 shàllot or 1/2 white onion, diced 
  • 3 gàrlic cloves minced 
  • 100 g càtch mushrooms dàintily cut 
  • 100 g risotto rice 
  • 500 ml vegetàble stock 
  • 1/2 tbsp white wine vinegàr (Optionàl)* 
  • 4 tbsp nutritious yeàst pieces (Optionàl)** 
  • New pàrsley to serve 
  • Sàlt ànd pepper to tàste 

Directions 

  1. Wàrmth the olive oil in à huge sàute contàiner. Include the shàllot ànd gàrlic ànd cook on à medium-low wàrmth until diminished. 
  2. Include the mushrooms ànd cook for à further moment. 
  3. Blend in the risotto rice ànd promptly pour in the stock ànd vinegàr (if utilizing).
