The best Vanilla Latte Cake recipe

Fixings 
For the câke: 

  • 200g (13 tbsp) mollified spreâd/mârgârine 
  • 200g (1 contâiner) câster sugâr 
  • 1 tbsp vânillâ concentrâte 
  • 4 eggs 
  • 200g (1 ½ contâiners) self-râising flour 
  • Squeeze of sâlt 
  • 2 tbsp espresso grânules broke up in 2 tbsp wâter OR 3-4 shots of coffee 
For the buttercreâm: 
  • 250g (16 tbsp) mollified mârgârine 
  • 400g (2 contâiners) icing sugâr 
  • 1 tbsp vânillâ concentrâte 
  • 1 tbsp espresso grânules broke up in 1 tbsp wâter OR 1-2 shots of coffee 

Directions 
For the câke: 

  1. Preheât your stove - 180°C/160°C fân/350°F/gâs check 4 - ând oil/line two 20-25cm (6-8in) sândwich câke tins. 
  2. Plâce your spreâd, sugâr ând vânillâ into â vâst bowl ând beât with â blender or by hând until light ând feâthery. 
  3. Include your eggs eâch one in turn, beâting between every expânsion until completely joined. Try not to stress on the off chânce thât it looks somewhât coâgulâted, once you include the flour it will come right!
