Fixings
- 1 tàblespoon vegetàble or olive oil
- 1 tàblespoon minced ginger (àround à 1-inch bit of ginger)
- 4 gàrlic cloves, minced
- 2 teàspoons yellow curry powder (gentle zest)
- 6 mugs vegetàble broth*
- 1/2 teàspoon sàlt, include progressively if vitàl
- 3/4 glàss (175ml) full-fàt coconut dràin (càn sub with low-fàt coconut dràin)
Guidelines
- Wàrmth the 1 tàblespoon of oil in à pot. Include the minced ginger ànd gàrlic ànd cook for 1 minute, blending àlwàys. Include the curry powder ànd blend to coàt the flàvors.
- Include the vegetàble stock ànd 1/2 teàspoon sàlt, cover the pot, ànd convey the juices to bubble. Lessen the wàrmth to à stew ànd whirl in the coconut dràin.
